It’s finally time to break out the candy thermometers folks! I can’t wait to make candy with you, and am starting with nothing other than my favorite confection to make. Marshmallows!
Marshmallows have historically been underrated. For the longest time, it was just Jet-Puffed white mallows. Which are without a doubt, very good…but marshmallow is such a perfect canvas for creativity and it just wasn’t being utilized much until recently. Shout out to the good people at SmashMallow for bringing the flavor combos and gourmet mallows to the everyday grocery aisle a few years ago. And a major high five to my friends over at Stuffed Puffs for doing what so many of us have tried to do around the fire…put the chocolate IN the mallow. Hallelujah! Not only did they do that, but thennnnn they sensed my greatest desire and went and coated a stuffed marshmallow with rainbow sprinkles. I commend and thank you Stuffed Puffs! (go ahead…click that link and see where you can buy them near you). Looks like Jet Puffed has some sprinkle spirit now too!

But now that I went down a sprinkle mallow chase online, I see that chocolate coated, graham dusted, mallows are also a thing. Which just reminded me of this quick side story before we get to the recipe…
